Mrs Joes' Nutty Slice
I got this scrumptious recipe from a dear old lady who lived in the same block of flats us in Perth, Western Australia in the 1980s. I never tire of it and it always disappears as soon as made.
The recipe relies on old fashioned teacups as a measurement. When I checked this it came to about 170 mils in modern-speak but I don't think this is the kind of recipe where strict accuracy is needed. Very quick to make on the spur of the moment (no tin to line or grease, no whisking or creaming) if you notice you've got an oven settled at 350ºF or a whisker above. The secret is not to over cook it. Slightly moist inside is delicious.
Ingredients
4 oz. margarine or butter
1 egg
1 teacup self raising flour
1 teacup dessicated coconut
¾ teacup granulated sugar
¾ teacup sultanas or mixed dried fruit
An 8 inch square deep sandwich tin is used for this recipe and it should be ungreased and unlined.
Put the dry ingredients in a mixing bowl. Melt the margarine/butter and syrup. I sometimes use the microwave for this but if you plan ahead sufficiently you can leave them in a bowl on the back of the range while the oven is rising or you are doing something else. Beat the egg and add it to the dry ingredients along with the melted mixture. Spread the mixture in to tin.
Cook in a moderate oven for 20-25 minutes. A falling temperature is better than rising. Do not over cook or it becomes dry. Still just a little soggy in the middle is best.
Cool in the tin and then cut into squares.
